Ingredients
1 chicory bulb, approx. 150g6 SUNSWEET prunes
2 pitted dates
2 tsp almond butter
200ml coconut milk
Juice of 1 lemon
250ml pineapple juice
Instructions
- Wash the chicory and peel off the leaves. Cut the prunes and pitted dates into quarters.
- Place chicory leaves and dried fruit in a blender. Add the almond butter, coconut milk, lemon and pineapple juice and blend until smooth. Add more pineapple juice or coconut milk until you reach the desired drinking consistency.
- Pour into glasses and decorate with prunes.
Tip: Instead of pineapple juice, you could use orange or blood orange juice.
